Ingredients: Free Mango Avocado Salad Recipe

2 ripe fresh and ready to eat Avocados.

1 ripe fresh and ready to eat Mango (use canned if fresh not available).

6 Cos lettuce leaves (or your variety of choice).

2 tomatoes sliced into eighths or whatever style you like.

1/2 a red onion, finely sliced.

2 carrots, julienned, or sliced to your liking.

Directions: Mango Avocado Salad Recipe

Halve the avocado by taking a knife and cutting into the avocado vegetable lengthwise until you strike the pit. Then bring the knife around the whole avocado vegetable so that the knife has cut a complete circle around the avocado, with the pit as the centre of the circle. The knife should then be removed from the avocado and safely placed out of the way. Take each half of the avocado with each hand, and then turn each half of the avocado in different directions, one clockwise and one counter-clockwise. The halves should separate with the pit remaining in one of the halves. Remove the put with the knife, or if you lack technique, take the pit from the avocado with a spoon. Discard pit.

Remove the peel from the two halves of your avocado and slice the avocado flesh into bite sized chunks. place the avocado chunks in your salad bowl along with the sliced mango, lettuce leaves, sliced tomatoes, red onion slices and carrots. Mix the vegetables and avocado around by tossing with spoons or salad servers. Add your favourite dressing at this point, and any salt and pepper to taste that you feel is necessary. We suggest adding some chilli to this salad in the dressing as this really livens things up, but only if you like spicy food. Mango in particular is greatly enhanced with a chilli kick, but this is a personal thing. Chicken is also great as an addition to this salad and you can use the healthiest breast meat for this salad as the avocado acts to ease some of the dryness that this meat can suffer from.
