Our famous avocado salad dressing recipe is particularly good with mango salad. Use either the original version or the low fat salad version, or healthy salad version as set out below. We have been refining and tinkering with the salad dressing recipe since we first started making avocado salad dressing from family recipes some years ago now. This is our best, and most famous avocado salad dressing below, along with a healthy salad dressing, low fat salad dressing version which can use as an option if you wish.
Our Famous Avocado Salad Dressing Recipe
Ingredients: Free Avocado Salad Dressing Recipe
1 ripe fresh and ready to eat Avocado (hass avocados are particularly good).
1 tablespoon Extra virgin olive oil or avocado oil.
1 tablespoon freshly squeezed Lemon Juice or store bought.
1 tablespoon White Wine Vinegar (double up on lemon juice if you have no vinegar).
2 teaspoons Salsa. Choose your favourite salsa brand, and spice level, at the market.
1 teaspoon Dijon Mustard or Whole seed Mustard.
1 clove of garlic - crushed.
Salt And Freshly Ground Black Pepper or Black and Red Pepper, to your taste.
Directions: Free Salad Dressing Recipe - Avocado
Cut the avocado in half and remove the pit. Our suggestion is to take a knife and cut into the avocado vegetable lengthwise until you strike the pit. Then bring the knife around the whole fruit so that the knife has cut a complete circle around the avocado. Remove the knife and place on bench safely. Then take hold of each half of the avocado with each hand. Carefully turn each half in opposite directions maintaining a hold on each half of the avocado with each of your hands. One half should come free from the other, and the pit will remain in one of the halves. Place the half without the pit on the bench. Take the knife in your preferred hand and hold the half avocado with the pit in your other hand. Strike the pit with the knife firmly but not too hard, maintaining control of the blow to ensure you do not glance off the pit and strike your hand. The knife should cut into the pit, and you should be able to remove the pit with a twist of the knife, as the pit should have stuck to the knife blade. Discard pit.
Remove the peel from the two halves of your avocado and put the avocado pulp in a food processor. You can, instead of peeling the avocado, scoop out the avocado pulp with a spoon. Add the extra virgin olive oil or avocado oil, lemon juice, vinegar, salsa, crushed garlic and whole seed mustard. Blend until the mixture reaches a smooth and creamy texture. Add salt and freshly ground black pepper or black and red pepper to your taste. Place the mixture in an airtight storage jar (preferably one that does not leak) and place in refrigerator to chill. Before serving stir the mixture to the smooth creamy texture you had after blending and serve over your favourite avocado salad.
Low Fat Avocado Salad Dressing
The directions and the ingredients for the low fat salad dressing recipe version of our famous Avocado Salad Dressing recipe are the same as above, but substitute 2 Tablespoons of low fat greek style yogurt for the extra virgin olive oil or avocado oil and the white wine vinegar. Double the amount of lemon juice. To ensure that the yoghurt does not curdle, and emulsification takes hold, when you put the yoghurt into the food processor, keep it separate from the lemon juice and do not delay when adding ingredients to the food processor. Once blended the mixture should remain mixed, but prior to serving, give it an additional firm mixing, or blend again. This is a fantastic healthy salad dressing recipe that loses none of the flavour, but reduces the fat content and makes a wonderful healthy avocado salad dressing.
